Lemon & Lime Pickles

In between rain showers (more rain!) I took 15 minutes out of the working day to start on some lemon pickle. I was intrigued by Kelly's recipe (taurus rising: Lemons 101 ), and with a groaning lemon tree it seemed like a great alternative to making yet more marmalade. I used coriander rather than fenugreek.

I've also started a batch of lime pickle based on Chris's recipe here, but it's not really interesting enough to photograph yet :-)

What would you eat it with? Looks gorgeous- summer in a jar!

I reckon that would go well with a hot vindaloo!

glad to see you have gone mad pickling. you shall be rewarded. I'm here on the Cocos Islands surrounded by limes but unable to do preserving as they won't let me through the quarantine with home-made food!
