1kg rhubarb - chopped 2.5 cups white vinegar (although I used 1 cup cider and the rest white) 3 cups firmly packed brown sugar 1 tablespoon white mustard seeds 1 teaspoon mixed spice 1/2 teaspoon chilli powder (my addition - recipe calls for 1 teaspoon ground ginger but I didn't have any) 1.5 cup sultanas (I used 1 cup sultanas and 1/2 cup currants)
bring to boil once sugar has disolved then simmer until you get the desired "chutneyish" consistency :*)
Be warned I adapted this recipe so can't vouch for the taste. Smelt good though.
